Something Good to Eat

Something my husband said tonight at dinner has prompted this post. He said, "Shelley, this is the best thing you make for dinner!" Those of you who know David know that he tends to overexaggerate reality when he likes something. So, normally, I would have just blown this comment off as one of David's quests to make me feel better about what I do, thereby generating more homecooked meals, saving money by not eating out, etc. But I remembered that he made the exact same comment the last time I cooked this meal. So, I decided maybe I should share the recipe with you. Aren't you excited? Did I mention my kids love it! You can't put enough of it on Jeremiah's plate.

Realize too that the repertoire of meals I cook for my family is limited, so if you have a vast array of recipes that you choose from, this one may not actually rank quite as high as it does in the Park family. :)

The recipe came from my mother-in-law, Ann. And since I have no idea where she got it, she gets full credit for it. Thanks Ann!

Pecan-crusted Fish
4 pieces mild fish (we use frozen Tilapia, mostly because it's one of the only fish names I recognize when shopping for fish)
1/3 C finely chopped pecans
1/4 C flour
1/2 tsp seasoned salt
1/2 tsp Greek seasoning (I have no idea what's in this. Ann had an extra jar and gave it to me. Otherwise, I would probably just make something up by throwing in every spice I own-not necessarily recommended. The Greek Seasoning is quite yummy)
1 egg beaten
1 Tbsp water
2 Tbsp butter & 1 Tbsp vegetable oil

Wash fish & blot dry with paper towel. Mix pecans, flour, seasoning salt & Greek seasoning. Mix water w/ beaten egg. Dip each piece of fish in egg, then into pecan mixture. Meanwhile, preheat skillet and add butter & oil (oil keeps butter from burning -- who knew?) Cook fish about 2-3 minutes per side in hot butter/oil mixture.

sounds yummy to me, too and also low-carb (leaving out the flour) so will try for your dad soon.
